Rum [1]

Rum (Tafia), alkoholische Flüssigkeit aus der Melasse des Zuckerrohrsaftes durch Gärung und darauffolgende Destillation gewonnen. Während Jamaika- und Demarararum gefärbt zu werden pflegen, bleibt Kubarum meistens ungefärbt.

Die Melasse des Zuckerrohrsaftes, d.h. die nach der Kristallisation des Zuckers zurückbleibende noch zuckerhaltige Mutterlauge ist das Material für die besten Rumsorten; für weniger gute mischt man die Melasse mit Abfällen des Zuckerrohrs oder mit dem bei der Scheidung des Zuckerrohrs erhaltenen Schaum (den »Skimmings«). Aus den Abfällen und Skimmings allein wird der sogenannte Magenrum hergestellt. – Näheres s. Windisch, K., Ueber die Zusammensetzung der Trinkbranntweine. Vgl. a. Branntwein.
